Israeli couscous, also called pearl or Jerusalem couscous, is similar to regular couscous in that it’s a small, whole grain-like type of pasta made from semolina and wheat flour with a ball-like shape.

Israeli couscous has a slightly chewy texture, similar to barley, and, because it’s toasted, it has a slightly nutty and almost buttery flavour. Like regular couscous and other whole grains, however, Israeli couscous is rather bland on its own.  It tastes great with added nuts, seeds and diced dried fruits and is an excellent base or side in many recipes, as it absorbs sauces and herbs.
